Vegan Cinnamon Applesauce Muffins

These
vegan and gluten-free muffins are sure to satisfy the craving for a sweet and
healthy treat. Enjoy them for breakfast, a snack or as a healthier dessert.
Yield: 12 muffins
2 cups cinnamon applesauce
½ cup coconut oil, softened
1 tsp vanilla
1 cup brown sugar
1 ½ tsp baking soda
½ tsp salt
2 tsp cinnamon
1 tsp ground ginger
1 tsp allspice
2 cups gluten-free all-purpose flour
Preheat oven to 350°. Line a muffin tin. Mix together cinnamon apple sauce, coconut oil and vanilla. Add brown sugar, baking soda, salt, cinnamon, ginger and allspice.
Add flour and stir until just combined.
Bake 15-20 minutes or until a toothpick comes out clean.
