Foraging for Roots
Foraging is the act of finding and gathering wild foods.

As the autumn season winds down, it is the perfect time to begin foraging and digging roots. As the plants begin to draw their energies into the ground to store them for winter, we can begin to take advantage of this and dig them up to be used as tasty root vegetables or process and dry them for coffee, tea, and medicine.
We'll take an in depth look at some specific roots that we love to harvest this time of year and discuss ecology, history, recipes, and how to harvest and process.
We'll walk through the process of making dandelion root coffee from start to finish and enjoy a sample to end the class. Participants will get hands-on experience digging and cleaning roots, learning what to look for and what to avoid, and demystify the process of turning roots into food and drink.
Come dressed for the weather and prepared to leave dirtier than you arrived.
Beginners and experienced foragers are welcome.
